This is my version of the simple Scottish soup. Great on a cold day or when you are sick!

- 1 cup of cut up chicken meat dark meat preferably
- 1 carrot, peeled and sliced
- 1 sticks of celery, diced
- 1 large leek cleaned well and sliced into 1 inch pieces
- 5 cups of chicken stock or bone broth (if you have it)
- salt and pepper
- 1 cup of sliced potatoes or more if you would like a heartier soup
- 1 tablespoon of butter
